Death by Chocolate-Raspberry Cake

3 different types of Chocolate. 2 different types of Raspberry. Think you can eat more than a tiny slice of this cake? Think again.

My friend Miranda & I were watching the food network one night last January and when we saw a cake that had 21 layers. Drooling after about a minute, we jumped in the car to retrieve ingredients. We baked the cake, covered it in chocolate frosting, and finished it with ganache. It was delicious – but the picture of the cake you see below was attempt #3 at the perfect cake. And we think we finally have a winner. Attempt if you dare to make this rich cake but I will warn you – your kitchen will suffer. [I waited 2 days to clean up the huge mess]

Chocolate-Raspberry Cake

For this recipe you will need-

  • 1 box of Devils Food cake mix
  • 1 jar of whipped chocolate frosting [I prefer Pillsbury]
  • 2 tablespoons of raspberry jam
  • 2 tablespoons sugar
  • 1 cup of water
  • 1 bag of milk chocolate chips
  • 1 cup of whipping cream
  • 1/2 carton of fresh raspberries
  • 1 spray bottle

Bake the cake in 2 9 inch round pans according to boxed directions. While the cakes bake, mix together raspberry jam, sugar, and water in a sauce pan. After the mixture becomes a thin syrup, remove from heat. Once the syrup has cooled, pour into the spray bottle.

After the cakes have cooled, cut both of the cakes in half. Put the very bottom layer on a plate. Spray this layer with the raspberry mixture and then frost. Continue to do this with all of the layers but do not frost the top layer.

After you are finished spraying and frosting, you will need to make the ganache. Combine a bag of chocolate chips and 1 cup of whipping cream in a shallow sauce pan until the mixture is creamy. Spoon this mixture over the top of the cake and let it drip down the sides. Using a spatula, smooth the top of the cake. Before the ganache cools – top the cake with fresh raspberries. Allow the ganache to cool completely. This cake is actually better when it has set for about 2-3 hours [but I am sure no one will blame you if you don’t wait that long to eat it].
