Cilantro Corn Salsa

I was sitting at Qdoba on Monday night with Kevin [my wonderful fiance] eating a burrito that had some corn salsa in it and ever since I was thinking – how could I make this? Last night I attempted, and I am glad I did. It was mouth-watering.

For this recipe you will need:

  • 1 ear of sweet corn [You can use frozen as well but stay away from the canned stuff]
  • Olive oil
  • 1/2 of a lime
  • Sea Salt
  • a handful of chopped cilantro
  • 1/4 tsp hot chili powder

Start with a clean skillet and drizzle just enough Olive Oil to coat the bottom of the pan. Snap the ear of corn in half and gently place in the hot oil. It will only take a few minutes for the corn to cook this way, make sure you rotate the cobs. While the corn cooks, mix the cilantro, lime, and chili powder. When the corn is done cooking and cooled cut the corn off the ear and it to the cilantro mixture. Add salt to taste. Enjoy!
